The city of Portland, Oregon is on the forefront of using stationary food truck businesses to transform barren parking lots back into community based paradises.

These localized food courts dot the city and the premise is pretty straightforward.
The parking lot owner rents to a restauranteur – in this case, the Grilled Cheese Grill.
The Grilled Cheese Grill owner then subleases to other vendors. They share tented picnic tables, a port-o-potty, an ATM machine and residents eagerly chillax and keep disposable income dollars in the neighborhood.
These eateries cook all of their menu items to order, so my traveling buddy was able to enjoy her mini tacos on freshly pressed corn tortillas.
With all of our vacant spaces, this is definitely a GOOD idea that’s worth considering and supporting here in the Lowcountry.
